Cranberry Basil Spread

Ingredients

  • Two 8 ounce packages of cream cheese, room temp
  • 1/3 cup olive oil
  • 3 teaspoons (tsp) minced garlic
  • 3 tablespoons (tbsp) fresh basil, minced
  • 3 tablespoons (tbsp) fresh parsley, minced
  • 2/3 cup toasted pecans, coarsely chopped
  • 2/3 cup dried cranberries, coarsely chopped

Directions

  1. Toast the pecans at 350° for 5-8 minutes, set aside to cool
  2. Using a food processor (separately) chop the pecans, cranberries, then basil / parsley
  3. Use the food processor (or a mixer on low speed), mix cream cheese and olive oil until smooth
  4. Spoon the cream cheese into a large bowl, and fold in the other ingredients mixing thoroughly
