Ingredients
- 1 1/2 cups flour
- 1 1/2 cups old-fashioned oatmeal
- 1/2 teaspoon (tsp) baking soda
- 8 ounces (2 sticks) of softened butter
- 1/4 cup sugar
- 1 cup packed brown sugar
- 1 teaspoon (tsp) salt
- 1 teaspoon (tsp) vanilla extract
- 2 eggs
- 8 ounces white chocolate chips
- 6 ounces dried cranberries (about 1 1/2 cups)
Directions
- Preheat oven to 350°
- In a medium bowl, combine flour, oatmeal, and baking soda
- Using a mixer, cream butter and sugars until light and fluffy (if using a hand-mixer, use a large bowl)
- Reduce speed to low, add in eggs, vanilla, and salt until well combined
- Add flour mixture a cup at a time, until just combined
- Stir in chocolate and cranberries
- Cover and refrigerate for 30 minutes
- Line baking sheets with parchment paper
- Place tablespoons of dough on the baking sheets, about 2 inches apart
- Bake for 14 – 16 minutes, or until edges are golden brown
- Let sit on the baking sheet for 2-3 minutes, then transfer to a cool rack
- Repeat steps 9 – 11 for remaining dough
