Ingredients
- 2 cups dry macaroni
- 4 hard-boiled eggs
- 1 cup finely chopped celery
- 1/4 cup chopped onion
- 1/2 cup chopped sweet pickles
- 2 tablespoons (tbsp) sweet pickle juice
- 2 large carrots, shredded
- 1 teaspoon (tsp) salt
- 1 teaspoon (tsp) black pepper
- 1 teaspoon (tsp) sugar
- 1 tablespoon (tbsp) yellow mustard
- 1 cup mayonnaise*
Directions
- Boil 4 eggs in salted water. Bring to a boil, turn heat off, cover and let it sit for 17 minutes
- Peel eggs
- chop up 3 eggs, set aside the remaining 1
- Boil macaroni in salted water
- Run macaroni under cold water
- In a large bowl combine all ingredients and the 3 chopped eggs. Mix thoroughly. *Add additional mayo as needed to get the desired consistency
- Slice the remaining egg, place on top
- Server instantly or refrigerate up to an hour before serving
