Macaroni Salad

Ingredients

  • 2 cups dry macaroni
  • 4 hard-boiled eggs
  • 1 cup finely chopped celery
  • 1/4 cup chopped onion
  • 1/2 cup chopped sweet pickles
  • 2 tablespoons (tbsp) sweet pickle juice
  • 2 large carrots, shredded
  • 1 teaspoon (tsp) salt
  • 1 teaspoon (tsp) black pepper
  • 1 teaspoon (tsp) sugar
  • 1 tablespoon (tbsp) yellow mustard
  • 1 cup mayonnaise*

Directions

  1. Boil 4 eggs in salted water. Bring to a boil, turn heat off, cover and let it sit for 17 minutes
  2. Peel eggs
  3. chop up 3 eggs, set aside the remaining 1
  4. Boil macaroni in salted water
  5. Run macaroni under cold water
  6. In a large bowl combine all ingredients and the 3 chopped eggs. Mix thoroughly. *Add additional mayo as needed to get the desired consistency
  7. Slice the remaining egg, place on top
  8. Server instantly or refrigerate up to an hour before serving
