Meatballs with Cranberry Sauce

Ingredients

  • 2 pounds (lbs.) ground beef
  • 1 cup bread crumbs
  • 2 eggs
  • 1/4 teaspoon (tsp)fresh parsley
  • 2 tablespoons (tbsp) soy sauce
  • 1/2 teaspoon (tsp) garlic powder
  • 1/2 teaspoon (tsp) ground pepper
  • 1 can (16oz) whole cranberry sauce
  • 1 bottle (12oz) chili sauce
  • 1/3 cup ketchup
  • 2 tablespoons (tbsp) packed brown sugar
  • 1 tablespoon (tbsp) lemon juice
  • 2 teaspoons (tsp) minced onion

Directions

  1. Heat oven to 350°
  2. In a large bowl combine ground beef, bread crumbs, eggs, parsley, soy sauce, garlic powder, and pepper. Mix thoroughly
  3. Shape into meatballs, laying in a single layer in a 9×13 baking dish
  4. bake uncovered for 30-35 minutes, until no longer pink in the center
    • Turn meatballs over once during baking
  5. Remove from oven and drain the grease
  6. In a medium bowl, mix whole cranberry sauce, chili sauce, ketchup, brown sugar, lemon juice, and minced onion
  7. Pour over the meatballs, covering evenly
  8. Bake for another 30-35 minutes, until the sauce bubbles
  9. Remove from oven and let cool for 5-10 minutes
  10. Serve over white rice or egg noodles
