Creamy Tuscan Chicken

Ingredients

  • 4 skinless chicken breasts
  • 2 teaspoons (tsp) salt
  • 3 teaspoons (tsp) ground pepper, divided
  • 1 tablespoon (tbsp) canola oil
  • 3 teaspoon (tsp) minced garlic
  • 1/2 white onion diced
  • 1 can diced tomatoes
  • 2 cups spinach
  • 2 cups heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons (tbsp) chopped parsley

Directions

  1. Season chicken all over with salt and pepper
  2. Heat oil in a skillet over medium-low heat
  3. Cook chicken on each side for about 15 minutes, until cooked through
  4. Remove and set aside
  5. Add the garlic and onion, stirring until onions are translucent
  6. Stir in tomatoes, and spinach until spinach is wilted
  7. Add the heavy cream, remaining salt, and pepper, bringing everything to a boil
  8. Add parmesan and parsley, stirring until sauce thickens
  9. Add chicken back in and simmer in the sauce for 3- 5 minutes
