Ingredients
- 4 skinless chicken breasts
- 2 teaspoons (tsp) salt
- 3 teaspoons (tsp) ground pepper, divided
- 1 tablespoon (tbsp) canola oil
- 3 teaspoon (tsp) minced garlic
- 1/2 white onion diced
- 1 can diced tomatoes
- 2 cups spinach
- 2 cups heavy cream
- 1/2 cup grated parmesan cheese
- 2 tablespoons (tbsp) chopped parsley
Directions
- Season chicken all over with salt and pepper
- Heat oil in a skillet over medium-low heat
- Cook chicken on each side for about 15 minutes, until cooked through
- Remove and set aside
- Add the garlic and onion, stirring until onions are translucent
- Stir in tomatoes, and spinach until spinach is wilted
- Add the heavy cream, remaining salt, and pepper, bringing everything to a boil
- Add parmesan and parsley, stirring until sauce thickens
- Add chicken back in and simmer in the sauce for 3- 5 minutes
