Taco Spaghetti

Ingredients

  • 2 tablespoon (tbsp) olive oil
  • 2 pounds ground beef
  • 1 cup diced yellow onion
  • 2 packets taco seasoning
  • 2 tablespoons (tbsp) tomato paste
  • 20 oz canned diced tomatoes
  • 1 box spaghetti noodles
  • 6 cups of water
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Directions

  1. Heat the oil in a large stock pot over medium-high heat. Add the ground beef, onion, and toco seasoning
  2. Cook until meat is browned (3-5 minutes)
  3. Stir in tomato paste and diced tomatoes
  4. Break the spaghetti in half, and add to the pot along with the water. Bring to a boil, then cover and reduce the heat to medium-low
  5. Simmer until pasta is cooked through, about 15-20 minutes
  6. Remove from heat, and add the cheese. Stir until cheese is melted
